Ingredients
  

  • 1 lb Boneless, skinless chicken breasts Can substitute with rotisserie chicken for convenience.
  • 1 tbsp Olive oil Used for sautéing onions and garlic.
  • 1 small Onion, diced Yellow or white onion works best.
  • 3 cloves Garlic, minced Adds depth of flavor.
  • 1 can (15 oz) Black beans, drained & rinsed Can use pinto beans as an alternative.
  • 1 can (15 oz) Corn, drained Fresh or frozen corn works too.
  • 1 can (15 oz) Diced tomatoes with green chilies Rotel brand is a popular option.
  • 4 cups Chicken broth Low-sodium recommended for better control over salt.
  • 1 packet (1 oz) Taco seasoning Store-bought or homemade blend.
  • 1 tsp Cumin Enhances the smoky, warm flavor.
  • ½ tsp Chili powder Adjust for spice preference.
  • ½ tsp Smoked paprika Adds depth and a mild smoky taste.
  • To taste Salt & black pepper Adjust as needed.
  • 1 Lime, cut into wedges For serving, adds freshness.
  • Handful Fresh cilantro, chopped Optional garnish.
  • ½ cup Shredded cheese Cheddar, Monterey Jack, or Mexican blend.
  • ½ Avocado, sliced Optional topping for creaminess.

Instructions
 

  • Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add diced onions and garlic, cooking until fragrant and softened.
  • Add main ingredients: Stir in shredded chicken, black beans, corn, diced tomatoes, chicken broth, taco seasoning, cumin, chili powder, smoked paprika, salt, and pepper.
  • Simmer: Bring to a boil, then reduce heat and let simmer for 20 minutes to allow flavors to develop. Stir occasionally.
  • Adjust seasoning: Taste and adjust salt, pepper, or spice levels as needed.
  • Serve: Ladle into bowls and garnish with fresh cilantro, shredded cheese, avocado slices, and crispy tortilla strips. Serve with lime wedges on the side.

Notes

Make It Faster: Use rotisserie chicken instead of raw chicken to cut down on cooking time.
Spice Level Control: Adjust chili powder and smoked paprika to make it milder or spicier. Add jalapeños for extra heat!
Thicker Soup Option: If you prefer a thicker consistency, mash some of the beans before adding them or let the soup simmer longer.
